Stay warm with a bowl of our healthy Turkey Chili. This savory dish combines lean ground turkey and a colorful array of kidney beans, tomatoes, zucchini, celery and bell peppers — each full of antioxidants to combat oxidative stress and inflammation.
Ingredients
- 1/2 pound chopped cooked turkey
- 2 cups canned kidney beans, rinsed and drained
- 1 cup chopped zucchini
- 1 cup chopped celery
- 1 cup diced tomatoes
- 1 cup low-sodium vegetable broth
- 1/2 cup chopped onion
- 1/2 cup chopped bell peppers
- 1 teaspoon chopped fresh garlic
- 3/4 tablespoons chili powder
- 1/2 teaspoon olive oil
- 1/2 teaspoon cumin seed
- 1/2 teaspoon brown sugar
Instructions
- Preheat your oven to 475⁰ F and coat a glass baking dish with cooking spray.
- Place zucchini in a single layer in the dish, and roast for 8 to 10 minutes or until tender and lightly browned.
- While the zucchini roasts, place oil and onions in a soup pot. Sauté the onions until brown, then add celery and peppers, and continue to sauté.
- Add turkey, garlic, cumin seed, and chili powder to the soup pot. Cover and simmer for 5 minutes.
- Stir in the tomatoes, brown sugar, beans, broth, and roasted zucchini. Cover and simmer for 15 minutes.
- Serve immediately and enjoy. Makes four servings.
