
Cranberries and pears combine to create a dessert packed with vitamin C and anthocyanins—antioxidants that support long-term vision health. Sweet and tart, this dish is a perfect addition to your holiday dessert spread.
Ingredients
For Filling
- 2 pears, cored and diced
- 2 heaping cups fresh or frozen cranberries
- 2 tsp cornstarch or arrowroot starch
- 1/4 cup maple syrup
- 1 tsp cinnamon
For Topping
- 1 cup old-fashioned rolled oats (can use gluten-free if desired)
- 1/2 cup almond meal or flour
- 1/4 cup coconut sugar or brown sugar
- 1 tsp cinnamon
- 2 tbsp coconut oil, melted (can use butter or other oils as well)
Instructions
- Preheat oven to 375º F. Spray 9-inch pie plate with cooking spray or grease with neutral oil
- Combine all filling ingredients in a medium bowl and then pour into the pie plate
- Combine topping ingredients in a bowl (can rinse and use the same bowl from #2). Sprinkle topping on top of the filling.
- Bake for 35-40 minutes. Allow crisp to cool slightly before serving.
