
This simple salmon and asparagus recipe brings together fresh ingredients and powerful nutrition in one easy sheet pan meal. Salmon is rich in omega-3 fatty acids, while asparagus delivers vitamins A, C, and K—antioxidants that can help combat neuro-inflammation. Finished with bright lemon and fresh herbs, this dish is both flavorful and nourishing.
Ingredients
- 1 pound thin asparagus
- 1 pound salmon
- 2 tablespoons + 1 teaspoon olive oil, divided
- Kosher salt and fresh ground black pepper to taste
- Lemon, sliced thin
- Minced fresh herbs (like chives, mint or thyme), for garnish
Directions
- Let the salmon sit at room temperature while preheating the oven to 425°F. Line a baking sheet with foil.
- Trim asparagus and toss with 2 tablespoons of olive oil plus salt and pepper to taste, then arrange the asparagus round the perimeter of the baking sheet.
- Pat salmon dry and place in the middle of the sheet pan. Drizzle with remaining 1 teaspoon olive oil. Season both salmon and asparagus with salt and pepper to taste.
- Place sliced lemon over the asparagus only. Squeeze the lemon ends onto the pan around the salmon. Add fresh minced herbs of your choice on top of everything.
- Roast for 9–12 minutes, or until the asparagus is tender and the salmon has a pink, flaky center (or is 125–130°F internally). If the asparagus needs more time, remove the salmon and continue cooking until tender.
Serves 4
Tip: Store leftover salmon in the refrigerator for up to 3 days.
