Pumpkin Spice Chia Pudding

Looking for a lighter Thanksgiving dessert? This creamy pumpkin spice chia pudding takes just minutes to prepare and is full of eye-friendly nutrients like lutein, zeaxanthin, vitamin C and vitamin A.

Ingredients

  • 1/4 cup chia seeds
  • 1 cup milk of your choice
  • 1/2 cup 100% pure pumpkin puree (not pumpkin pie filling)
  • 1 tsp pumpkin spice (see recipe below)
  • 2 tsp pure vanilla extract
  • 3 tbsp maple syrup

Instructions

  1. Add almond milk, maple syrup, pumpkin puree, vanilla extract, and pumpkin spice to large bowl. Mix well.
  2. .Add in chia seeds and mix well.
  3. Pour into 2 serving bowls and chill for at least 4 hours or overnight

Serves 2

 

Homemade Pumpkin Spice

  1. Mix the following in a small bowl:
    • 3 tbsp ground cinnamon
    • 2 tsp ground ginger
    • 1 1/2 tsp ground nutmeg
    • 1 tsp ground cloves
    • 1 tsp ground allspice
    • small pinch black pepper
  2. Add to a jar for storage. Will keep for 1 year.
