
A smooth and creamy homemade hummus made in the blender with chickpeas, tahini, garlic, and lemon, perfect for dipping pita and fresh vegetables.
Ingredients:
- 1-15-ounce can chickpeas, rinsed and drained
- 2 cloves of garlic
- 1/3 cup tahini
- 2 tbsp lemon juice
- 1 tsp of salt
- 2 tbsp extra-virgin olive oil
- 5 tbsp water, or as needed to blend
- Optional seasonings: Red pepper flakes, paprika and fresh parsley
- Pita and/or assorted eye-healthy vegetables for serving
Directions:
- In high-speed blender or food processor, place chickpeas, tahini, olive oil, lemon juice, garlic, and salt. Blend until smooth scraping sides as needed. Add water a tablespoon at a time until desired texture and consistency are reached.
- Taste and adjust seasonings as you prefer
- Transfer to a serving plate and garnish with paprika, red pepper flakes, and/or fresh parsley.
- Serve with warm pita and veggies, as desired.
- Leftovers keep in refrigerator for 1 week or more.
