
Our salmon soup is a heartwarming symphony of goodness! With omega-3 fatty acids and eye-protecting carotenoids, this cozy dish nourishes both your brain and eyes.
Ingredients:
- 1 bunch of green onions, chopped
- 1 garlic clove, minced
- 1 bell pepper, chopped
- 2 carrots, thinly sliced
- 2 potatoes, thinly sliced
- 2 salmon filets, without skin (can substitute cod)
- Juice of 1 lemon
- 1 tablespoon of extra virgin olive oil
- 4 cups of stock, chicken or fish
- 1 tsp dry oregano
- salt and pepper
- 1/2 tsp cumin
Directions:
- Heat olive oil in a large pot. Add the onions, garlic, and chopped bell peppers and cook until soft and fragrant.
- Add broth, carrots, and potatoes to the pot.
- Add oregano, cumin, salt, and pepper to taste and stir.
- Bring to a boil, then reduce heat until carrots and potatoes are tender.
- Add salmon and let simmer until salmon is cooked.
- Remove from the heat and add lemon juice.
Serves 2.
