
These creamy overnight oats make a quick, nutritious breakfast. Packed with whole grains, protein, and fruit, they’re perfect for busy mornings.
Ingredients:
- ½ cup old fashioned (rolled) oats, raw
- ½ cup 1% milk
- 1½ cups non-fat plain Greek yogurt
- 1½ Tbsp chia seeds
- ½ tsp vanilla extract
- 1 mango, diced (use frozen if fresh is unavailable)
Directions:
- In a bowl, combine oats, milk, ¾ cup yogurt, chia seeds, and vanilla extract. Stir until well combined.
- Divide the oat mixture evenly into 2 jars or containers with lids.
- Refrigerate overnight.
- In the morning, top each serving with remaining yogurt and half a mango. Enjoy.
