MIND Diet-Inspired Brown Rice, Chickpea & Veggie Salad

The MIND diet (Mediterranean-DASH Intervention for Neurodegenerative Delay) was developed specifically for brain health and has been shown to slow down cognitive decline. This nourishing recipe combines nutrient-dense whole grains, beans, vegetables, nuts, and olive oil, all of which support brain health. Enjoy it as a side dish or on its own!

Ingredients

  • ¼ cup chopped red onion
  • Juice of 1 lemon, divided
  • 2 cups cooked brown rice
  • ¼ cup extra virgin olive oil (divided)
  • 1 15-oz can chickpeas, drained and rinsed
  • ½ English cucumber, cut into ½-inch dice (about 1 cup)
  • ½ red or orange bell pepper, cut into ½-inch dice (about 1 cup)
  • ¼ cup chopped toasted pecans
  • ¼ cup chopped fresh dill
  • ¼ cup chopped fresh cilantro
  • ¾ tsp kosher salt (plus more to taste)
  • Ground black pepper

Instructions

  1. In a small bowl, combine the red onion and half of the lemon juice. Let sit for about 15 minutes while preparing the rest of the ingredients.
  2. Place the cooked brown rice in a large bowl and toss with 2 tbsp of olive oil
  3. Add chickpeas, cucumber, bell pepper, pecans, dill, cilantro, salt, pepper, remaining lemon juice, and remaining 2 tbsp olive oil to the bowl with the rice. Add the onion and remaining lemon juice. Stir well and adjust seasonings to taste.
